All of our coffee is grown on our farm, Keke Lani Estate. We do not sell our 100% Kona coffee blended with coffee from any other Hawaii farm or other country.
Excellent coffee results from sound and consistent agricultural, processing, and roasting principles:
- Our pickers pick only the ripe cherries.
- After pulping the cherry, the beans are soaked overnight so that the fermentation process assists in removing the "slime" coat.
- The beans are then thoroughly washed and placed on the drying deck. Drying takes one to two weeks, depending on the weather.
- When the parchment is dried to a moisture content of 10-12%, it is stored in a humidity and temperature-controlled environment until it is milled and roasted.
- Our coffee is roasted in a fluid bed roaster to a medium roast.
We grade our coffee according to the Standards for Coffee of the Hawaii Department of Agriculture. These standards categorize coffee from Hawaii based upon cleanliness, color, roasting quality, allowance for defects, size minimum, moisture, type of beans. We sell only the following grades which are blended in our "Estate Grade":
- Kona Extra Fancy: size 19
- Kona Fancy: size 18
- Kona Number 1: size 16
- Peaberry: small, round, dense beans (limited quantities)
Approximately 2/3 of the blend is Extra Fancy and Fancy.
We do not sell: Kona Select, Kona Prime, Hawaii No3, or offgrade coffee.
