All of our coffee is grown on our farm, Keke Lani Estate. We do not sell our 100% Kona coffee blended with coffee from any other Hawaii farm or other country.
We perform most of the coffee processing on our own farm:
- Our pickers pick only the ripe cherries.
- After pulping the cherry, we soak the pulped beans overnight so that the fermentation process assists in removing the "slime" coat.
- The beans are then thoroughly washed and placed on drying racks. Drying takes one to two weeks, depending on the weather.
- When the parchment is adequately dried (moisture content of the green bean is 10-12%), we store the parchment in a humidity and temperature-controlled environment until it is milled and roasted.
- The coffee is roasted in a fluid bed roaster to a medium dark roast.
We grade our coffee according to the Standards for Coffee of the Hawaii Department of Agriculture. These standards categorize coffee from Hawaii based upon cleanliness, color, roasting quality, allowance for defects, size minimum, moisture, type of beans. We sell only the following grades which are blended in our “Estate Blend”:
- Kona Extra Fancy: size 19
- Kona Fancy: size 18
- Kona Number 1: size 16
- Peaberry: small, round, dense beans (limited quantities)
Approximately 2/3 of the blend is Extra Fancy and Fancy.
We do not sell: Kona Select, Kona Prime, Hawaii No3, or offgrade coffee.
